Lavender Coconut White Chocolate Chip Cookies

These cookies are so lovely and savory with each little purple fleck of lavender which pairs perfectly with the sweet coconut and white chocolate. This cookie is the perfect amount of sweet without being too heavy.






Ingredients

2 1/2 cups of all-purpose flour

1/4 cup of coconut oil

1 1/2 cups of granulated white sugar

2 tbsp of dried lavender

1/2 cup shredded sweet coconut

1 tsp of vanilla

1 stick of butter at room temperature

1 cup of white chocolate chips

2 tbsp of cornstarch

1/4 tsp of salt

1 tsp of baking soda

2 eggs




Directions:


Preheat oven to 350 degrees


In a bowl mix flour, salt, cornstarch and baking soda and set bowl aside.


Take lavender and roughly chop then add sugar and lavender into mixer and mix. Add butter, egg, vanilla, and coconut oil and cream together until fluffy.


Slowly incorporate flour mixture into sugar mixture and continue mixing until dough starts to pull from the sides and all ingredients are incorporated. Then mix in shredded coconut and white chocolate chips.


Spray baking sheet with none stick spray or line with baking paper. Scoop into small balls and put on a baking sheet placing them about 1″ apart. Bake for 10- 12 minutes or until the edges of the cookies are golden brown. Allow cookies to cool on a cooling rack for 5 mins before serving.
